Going Meatless?
Hello, hello, hello.... :)
It's been a while since I did up a little blog.. And this one is going to be very little :) haha!!
I shared a post on both Facebook and Instagram recently about my 'Meatless Monday' experiment!
I mentioned how it was something I had been meaning to try and I was really surprised how easy it was to incorporate into my day.
So, the initial 'Meatless Monday' turned into meatless Monday, Tuesday and Wednesday.. And who knows, we could also add Thursday in there! :)
I have no intentions right now of completely cutting meat out of my diet! This was just a little experiment I thought I'd try out and now it's become part of pretty much half of my week!
After sharing the posts on Facebook and Instagram, I was surprised by how many people reached out to me via message to let me in on their meatless endeavours! So, with this in mind I thought I would share one of my very, very simple and basic 'Meatless' dinner meals! Basic and simple but OH SO YUM! I love food and my partner loves food so when he gave it the thumbs up I knew I was onto a winner! :)
There is one thing that has really stood out to me now that I am not purchasing half as much meat as I was before is the difference in my shopping bill.... I couldn't understand why my shopping bill was noticeably lower recently until I got home and realised that it was because I wasn't purchasing as much meat.. Crazy!!
Anyways... Here is the recipe, the particular quantities I provide below serve 1 so can be multiplied to increase the servings :) I usually cook up 3 or 4 at a time! ENJOY!!
60g Black Beans
68g Chick Peas
50g Italian Passata Sauce
50g Red Capsicum (Red Pepper)
25g Onion
Himalayian Salt
Pepper
Mixed herbs
Garlic
Curry Powder
Note: With the seasonings / spices, the quantities is at your discretion. I add the curry powder and taste as I go.
Method: Simple! Pop all your ingredients in the pan, cook on a moderate to low heat and add spices / seasonings as it cooks to increase flavour. Taste as you go but, be warned, you may not be able to stop 'tasting'... Haha!
There is never anything fancy about my cooking or my cooking methods. I'm all about simplicity and time convenient meals!
